Fish from Ålesund
Ove only use raw materials from the local area. Fish, as opposed to meat, does not tender from lying over time. Good logistics are therefore essential for maintaining fresh quality products. The restaurant owns shares of the fish receiving company Marine Sales, and thus has a board decision that they will be the first to choose when the fish arrives at the reception. Ove and his colleagues spend much time to obtain what they need, and the first shift in the morning is generally used to bring fresh crayfish, mussels and various fish species from the many local vendors in the district.
